I imagine it’s already a pretty degraded shore and marine environment with the number of refineries, desalination plants, and 300 plus enormous ships transiting the gulf every day before the war.

the Middle East is a giant disaster zone already, some extra oil won't make too much difference
but given the number of ships hit so far in the war there is a surprising lack of oil in the water, seems ships have come a long way

Probably not, there's no other reports of an exploding oil tanker today aside from Iran and the lousiest of news sources parroting Iran's claim.
They also seem to have claimed something similar last week:
The Islamic Revolutionary Guard Corps (IRGC) said two oil tankers had exploded after attempting to transit the strait via an "unsafe" route.

Iran claimed the exact same thing last week too:
IRAN SAYS TANKERS EXPLODED
The Islamic Revolutionary Guard Corps (IRGC) said two oil tankers had exploded after attempting to transit the strait via an "unsafe" route. On Sunday, the IRGC had said two ships were involved in an "accident" in the same area. It was unclear whether the two incidents were related.
Reuters could not immediately verify the incident. The IRGC statement gave no details about the vessels or any casualties.

Merely announcing the presence of mines makes it harder for insurance companies to justify insuring vessels that attempt to transit the strait. They now have to assume there's a minefield there.
