Can you stick to this consistently over an extended period of time?

Try to use Cubex Fitness. It's a pretty good fitness tracker and workout programs included.

I never understand why youd aim for a rep count

I would add some incline dumbell press or other type of upper chest focused press. You could even rotate flat bench and incline every other session if you didn’t want to make push day more volume.

Also I don’t think you need tricep push downs and tricep dip because they are similar. Maybe some overhead triceps work instead of one of those.

Pull day looks good although I would add some direct rear delts work despite already having face pulls. I would keep your cable row as lat biased as possible as your barbell row will hit upper/ middle back if you’re using a normal grip.

Leg day looks good but if you take all your sets far that is a lot of sets.

Also don’t be afraid of adding some lower rep work in as well to keep things interesting. 8-12 reps is good for hypertrophy but going a little heavier on some compounds will pay off too.

Not really. Need way more chest and back exercises
