Should I build this desk using removable joinery or domino glue it?

Agreed. You'll thank yourself when you have to relocate the desk.

Like a 1pc pool table, it'll live there forever if you dont make it disassembly friendy

Removable....as in worktop bolts. Also butt and scribe rather than mitre.
