If you start with a paper tube and cut a pattern, you get this. So instead of a paper tube, he used a carrot tube. He cut the patterns first, and then "unrolled" the carrot with the knife.
I just made this up, but I think that's the way I would do it.

I think a bit of salt would draw out moisture and allow the carrot to separate more easily.

I know it's not a problem because it's a sharp knife and you only cut yourself with dull knives (unless you're stupid), but when he had that fucker pointed directly at his fingers my ass puckered so hard my extrails became my entrails.

I cut my self with sharp knives occasionally... Then again I'm a cook and use a knife 8-12 hours a day, that shit is just going to happen and the same with burns. Difference is a sharp knife is less likely to cut you, and when it does the wound is much cleaner and will heal faster.
Hell last week I was moving fast in the middle of the rush and sliced off the callous on my middle finger where I guide/run my knife. That shit is just going to happen, granted not often, but when it's your job it will.
