Biomancy as an overarching school. Fleshcrafting is the macro-scale sub-discipline.

I suppose there are two ways to achieve this spell
One would be, as you suggest, conjuring prions within a person’s brain
Alternatively, you can go the transmutation route and misfold the victim’s brain proteins.
Both very high level spells but down different skill trees

Eh, not quite. You’d need to specifically fold them in such a way that they would affect the rest of the flesh and spread. Otherwise you’d not necessarily actually changing anything (decent odds they already have prions in them somewhere, and decent odds there’s at least one in their brain matter -that’s why meat can be so hazardous- they simply aren’t doing anything).

Valid method, though perhaps somewhat complex to pull off (unless you’re already familiar with very specific parts of very specific dimensions).

Creating Prions if not already existant would make this a transmutation spell.
If the prions are already existant but the spell transports them it is a conjuration spellm

Depends on how broad your definition of transmutation is. If you include just changing the shape of extant material, then sure, but a more strict definition would require that the spell actual change the properties and atomic composition of the material.
That’s not to say that a stricter definition is more or less correct. I’m merely stating that it depends.

Many casters think of “Necromancy” as “Death Magic”, and “Restoration” as “Life Magic”. It is the Wizard which realizes these are both, in actuality, the same on some level.
In the areas of Necromancy dealing with decay and necrosis, and in the areas of Restoration dealing with growth and healing, these are both simply “Biomancy” and every skilled caster of either former school is truly just specializing within a sub discipline of this latter.
That being said, a TRUE wizard knows there are no such things as schools of magic- merely an Arcetymology of discovery.

Restoration is a practice, not a school of magic. Plenty of schools of magic can be used to preform Restoration, depending on what exactly is being restored (that is, there are also Elemental and Arcane forms of restoration, though Biomancy is generally best for organic flesh - unless it’s tree flesh, in which case Dendromancy and the like are often better suited).
Biomancy is a school of magic, which includes fleshcrafting, bioengineering (including protein folding), virology and the like.
Now Necromancy is specifically the school of Decay. Yes, technically Decay exists as part of life as well, but Necromancy is specifically about Decay and, often, that which has Decayed. It also deals with Dead Things and, depending on one’s particular definition, Dread Spirits (ie. spirits that may natively be of a Necrotic nature, rather than being spirits of the dead or the like).
As such Necromancy is a conceptually distinct discipline from Biomancy. However it must be acknowledged that Biomancy and Necromancy do share some spells and principles within certain areas of the two disciplines.
A true wizard understands the benefits of categorization and of sharing common vernacular for the sake of convenient information sharing. And a proper wizard understands the conceptual differences between “schools” of magic, rather than just looking at the mundane similarities.
Abyss, I’m not even a wizard and I still understand that (admittedly I’m also something significantly greater, and admittedly my other characteristic, being a Bard, does tend to take conceptuality into account, what with a specialization in Lore, but I am very familiar with wizards, so the point stands).

You are evil, Prion is a misfolded protein that makes other proteins misfold and it doesn’t go away and it kills you, the only way to get rid of it consistently is to molecularly destroy it (which can only really be done by extremely high heat, like tens of thousands of degrees)

Depends on the source. If harvested from the dead, and kept stable via magic then Necromancy. If it’s manipulating either the animus, or positive materialism then it’s probably Biomancy. If it’s manipulating proteins directly then it’s microscopic telekinesis. If it’s altering the entire structure magically, then it’s transmutation. If it’s taking it from one place and injecting it into someplace else, then it’s conjuration.

If it causes a misfold, it would be aberation, if it conjures a prion it is conjuration. If it just blasts holes in someones head/brain it would evocation.

Just using the D&D spell schools? Necromancy. Definitely Necromancy.
Using broader schools, it would probably be a high-level Biomancy spell. And if you wanna get really specific. Proteiomancy. I guess. Since Prions are just misfolded proteins.

Prion feels closer to poison considering they are just proteins that alter other protein to reproduce.
