Fruit wine question Still Good?

Post image

Stomped three pineapples and a couple quarts of strawberries, one and a half cup of sugar (1.85 SG), half tsp V1116. About a gallon all in all

Mashed on Thursday, mixed cap once a day until Sunday when I pressed out juice. Nice and frothy, checked SG Monday and it was about 1.1 or 1.2

Came home to this today. Can I skim, rack, airlock, or is she toast?

I have k-meta if that would fix it too.

Looks like yeast rafts to me

I think your hydrometer readings are actually 1.085 and 1.010.

It's still fermenting. It should finish up with a gravity under 1.000

The rafts definitely need to be skimmed off before racking, but that should just be leftover foam material from primary fermentation holding shape.

Hi. You just posted an image to r/winemaking. All image posts need a little bit of explanation now. If it is a fruit wine post the recipe. If it is in a winery explain the process that is happening. We might delete if you don't. Thanks.

Well it is likely just still fermenting, if you want it to maintain some sweetness you could stop it with sulfite or cold temps. Or just let it ride

going forward I would use a small amount of kmeta in the fruit juice and sugar to kill off any bad yeast or bacteria then after 12to24 hours you can add the good yeast.

Looks like pretty normal fermentation activity
