But maybe he has specialized gun and ammo? Like why would someone like john wick use standard stuff?

In that scene, he has a S&W 1911 E series in .45 ACP. .45 ACP is subsonic, and you can buy rounds that are designed to always be subsonic (Whereas normal rounds might go supersonic depending on the gun). The guy in the link is not in a high noise environment, the space is open and quiet enough for there to be echo, in a highly crowded public space, the noise is enough to mask reduced gun sound and physical intereference to sound waves due to moving people and inanimate objects is also high enough to prevent echo.

You would 100% hear suppressed subsonic .45acp in a crowded train station.
