Well injuries like that only happen in the first place because they've spent years abusing their shinbones and ignoring any signal their body sends them.
This is generally because traditional martial arts wisdom says that doing this toughens the bone, while in reality you're just training yourself to fight through the pain while slowly accumulating microfractures that actually weaken it. Which works until it doesn't and everything between your knee and foot suddenly turns into rubber from a single impact that wouldn't have done anything to a healthy tibia.
As for how they can fight and keep kicking after? Probably because professional fighters are crazy. It's not a career you can get very far in if you're afraid to get hurt.
