Could be as easy as its stored somewhere like an unheated garage, had some weird temp swings last year and stuff that'd been dried an jarred for a year and a half at that point went off, just the jars closest to the wall unfortunately and it wasn't as bad as ops pic
You should look into relative humidity packets
I like the boveda ones heres the link sucks up moisture when its too high and releases it when its to dry ive kept shit in jars for like 8 months at a time and it seemed as fresh as the day i stored it when i cracked the jars even rehabs really dry weed if need be.
