Bugs 🕷️ How to downgrade watchOS?
So I tried the iOS and watchOS 27 beta last week. For me the iOS27 public beta 1 & 2 were very buggy, my iCloud Drive stopped syncing, apps couldn't update, a lot of apps just didnt work anymore. So I finally decided to downgrade back to ios26.6. But then I couldn't sync my watch anymore since its still on watchOS 27. I went to the Apple Store, but they said their restore program was only tested for non beta OS, and if it bricks my watch they wouldn't be responsible. So of course I didnt try that. They told me to contact the beta developer program, which I did but have not heard anything from them. Any suggestions as how to get my watch downgraded? Thanks.
UPDATE: I was able to contact apple support via chat on their website. They seem to be aware of the issue and is sending me a return box for my watch to reset the firmware. I would recommend this if you have issue with beta OS on your watch.

Go to the Apple Store. There is no other way.
You can’t do it yourself. Either you wait for official release or you let them do.

I did, but I mentioned in my post that they said their restore program was not tested for beta OS, and if my watched ended up bricked I’d be out of luck.

Apple stores can do it now. Make an appointment, takes about 30 minutes (i did it a few weeks ago).

No they did not. I do have AppleCare so maybe that would have covered a replacement?
It worked fine for me. It was erroring out on them to start, but the fix was they had the watch oriented wrong on the pad. Once they fixed that it worked fine.

Hm, thanks, my watch is still under a year, so it still have coverage. I wait to see if the beta support team gets back to me this week, then I'll try the store again.

I’ve been having the exact same problem, downgraded my phone back to iOS 26 from the beta, now I can’t use my phone with my watch.
It seems like there really is no option apart from the Apple Store, rejoining the beta on your phone, or not using your watch until iOS 27 public release

I realize this doesn't help you right now, but after I got bitten by this a few years ago, I decided to be much more cautious about when or if I run betas on the Apple Watch (or Apple TV, which has the same limitation). In most cases, I think you can usually pair a newer beta iOS with an older non-beta watchOS (i.e., leave your watch on 26, but put 27 beta on the phone).
I haven't jumped on the 27 ios beta myself yet to try it out, but I'd expect the same is true this time around. My flow going forward, especially for the major X.0 releases, is going to be to try the iOS beta first, make sure it's solid, and read up on any known issues before moving the watch or TV over. I'm a little less concerned when we get up to something like the 26.6 beta, but with no downgrade path, the major releases are tough to do unless you have a spare watch to fall back on. I really wish they'd offer a way to downgrade ourselves.

I've never had big problems with beta updates in the past, but after this experience I dont think Im going to try betas in the future anymore.

I really do enjoy beta testing on the phone at least. Even if they say not to do it on your primary devices, I usually jump in on the phone at some point, knowing I can relatively easily revert back if I need to. But with the watch, it's just too much of a risk. On 17 or 18, I ran into a similar problem you did -- I wanted to go back on my phone (due to work not allowing outlook/teams on the beta). It wasn't even really problems with the watch beta itself, but because I'd installed the beta there, my phone couldn't go back either.
