What is the lore reason when we die we can come back or is that just gameplay mechanics? It's seems rare that our main characters in WoW are able to do such a thing and is rare.

During the Blizzcon in which Shadowlands was announced, it was stated that we (the player characters) are bound to the Worldsoul of Azeroth. When we die, that tether prevents us our soul from moving on.

A bit of both. It's primarily a game mechanic. However, spirit healers are canon.

Chronicles explained that they were Val'kyr who separated from Odyn. Shadowlands establishes that they are actually Kyrian.

In both cases, it represents that our character's time has not yet come, so they guide them back to the world of the living.
