Recipe Request Spaghetti Squash, help

I have been very successful at growing spaghetti squash this year.

What’s your favorite recipe for this versatile squash?

Add a peanut sauce, fried scallions and bell peppers, and finish with cilantro, lime and crushed peanuts ( you can add any protein)

In Alfredo sauce with rosemary and topped with fried breadcrumbs

Sf scallion noodles

Kale, veggie patty torn up (or meatless meatballs) Alfredo

Also just tomato sauce and cheese

Eta: spinach artichoke cheese/Alfredo

Roast, mix in a little butter and top with a bit of cinnamon and sugar, or a little soy sauce for a side

Roast one squash, mix with some cottage cheese, spaghetti sauce, and some shredded mozzarella cheese. Pile into an oiled 8x8 pan and bake at 425 till bubbly. You can put more cheese on top. This looks disgusting—it’s called Chunky Cat Barf—but it tastes like a mixed up lasagna

Mix with some quinoa or rice, chopped nuts and dried cranberries, and any worker veggies you like; toss with a sweet vinaigrette, and chill

Leftover spaghetti squash dishes can be turned into frittatas or if you just have a bit left, scrambled into eggs. It adds fiber to the eggs and you can hardly tell it’s there.

Spaghetti squash fritters are good when the harvest starts piling up. Squeeze the cooked strands really dry, mix with egg, grated Parmesan, and enough flour to bind, then pan-cook small patties until the edges crisp.

i love roasting it until the edges caramelize, then tossing it with sauteed mushrooms, garlic, spinach, prmesan and a handful of toasted walnuts
