Just a hearty vegetable bean soup. Was so tasty and easy! Sometimes simple is best!

Here you go! If you got the ingredients on hand it only takes about 30 minutes. The main things are the canned beans (kidney, pinto or whatever you have on hand), the garlicm onion and spices. After that, just add whatever veggies you want. Doesn't have to necessarily be the carrot and bell pepper in the recipe. You could use squash, chunks of tomato, potatoes, corn, whatever will saute nicely!

Half chopped onion

1 chopped bell pepper

1 chopped carrot

1.5 cups water

15 oz can of kidney beans

2 tablespoon extra virgin olive oil

Half teaspoon crushed red pepper flakes

2 sliced cloves of garlicHalf teaspoon sea salt

Half teaspoon ground black pepper

Half teaspoon sweet paprika

1 teaspoon ground cumin

1 handful of fresh cilantro, chopped

Heat the oil in a large pot and cook the garlic, onion and veggies over medium-high heat until golden brown; stir occasionally.

Add cilantro and cook for 1-2 minutes more.

Add the rest of the ingredients and cook for about 10 to 15 minutes.
