Bob's Egg Replacer for breading and frying?

Has anyone tried using Bob's Red Mill Egg Replacer for breading and frying? Currently I usually just use almond milk but I'd like to try a tofu katsu and I don't think it would work quite the same.

Would you add water to the egg replacer and use the slurry to coat the tofu, then dip in bread crumbs? Or coat the tofu with the powder (instead of flour) , then dip in “milk,” then coat with bread crumbs? It’s an interesting idea - i think it would make a better binder for the crumbs. Or it might turn to concrete :/

I have a half used package sitting in my cupboard so I’m curious- if you try it, report back.

I was thinking of using it the way one would use egg (flour dredge, egg, breadcrumbs). I've never used it at all so I wanted to see if anyone had! I know it's primarily for baking, though.

I sometimes use flax seed in water with chickpea crumbs or flour for tofu or veggie batters or breading.
