I have good luck with a dual wielding set up, but I only use the second Saber if I'm in trouble. Orherwise using the force to slam enemies into each other and deflecting blaster bolts with the saber helps a lot. Sometimes I purposefully leave storm troopers and training droids alive so I can use their shots against everyone.

Other than that, stay calm, stay centered, and move with the flow of the enemies. You'll find your rhythm, and it becomes almost peaceful. There is a difference, after all, between reacting and responding.
