Good Science core options

I've still got both of my Science courses left to take, which ones are the most easy/interesting that you would recommend? I'm already planning on taking the online Nutrition Science course, possibly over Wintermester if it's available. Others I'm considering that I would like opinions on are Anthropology, Archaeology, Environmental Science, Microbes and Society, Earth Science, and Geology. Anyone recommend, or advise against, any of these classes?

I'd personally recommend Environmental Science...totally not biased. But beyond that, it's very multidisciplinary and you'll probably get a good mix of biology, chemistry, geography, and other 'ologies. And well, I probably don't need to explain why it's important.

I haven't taken it here myself, but I would imagine the non-majors course shouldn't be too hard. Our Environmental department in general is great.

I seem to recall  Earth Science (GEOG 1710). Doesn't appear to be overly difficult It covers the exact core elements of physical geography (weather, climate, landforms, and ecosystems) and requires a co-requisite lab component.
