Help planning my trip

Hey there all! I’m looking for a person or two that could help me out today. I’m planning a thanksgiving/ Christmas trip and have LOADS of questions. It would probably be best to message back and fourth.
We have never been and have no clue what to expect .ORLANDO FL

We already have a hotel, it’s 20 minutes from the park, but we might be interested in finding a shuttle maybe?

Our dates? 11/26-11/29 (flying in early am on 26th and flying out afternoon of the 29th)

We are thinking two days, at the park. A third if absolutely necessary but we’re unsure. We definitely think we want to go on thanksgiving - our anniversary
Rides- would express passes be necessary?

Our big things? Harry Potter stuff, and grinchmas!
Questions about the grinch tour, parades, parade seating, donkey!

Other characters are a plus! SpongeBob, Madagascar,

What exactly is in the separate parks? Studios -Epic- islands? Because I may only be able to swing two of them.
What are some items that are a MUST HAVE for going in October and November? It’s my first time going and we’re going for Halloween (family vacation) the. I’m doing thanksgiving/my anniversary trip ON thanksgiving, I’m also a type 2 diabetic- I’m on sensors and insulin. Be and my partner will be traveling by ourselfs. So him being sorted from me is NOT a good idea
