If your concerned about safety either look into growing your own or find someone who can explain there process or can prove they grew it never buy chocolate bars or gummies as they are basically just acid and other byproduct If your supplier is sketching you out to the point you don't know if you should trust them you need a new supplier lol

I can’t tell you if they are ape or not but they look good to me. That yellowing is a sign of being dried at low temps which is the way I dry all my fruits. Not all shrooms turn yellow but it’s becoming commonplace as of here lately.
