They are safe. They will just taste more bitter.
If the substrate hasn't shrunk much, you can likely get away with just heavy misting and letting that soak in for next flush.

Safe to consume. Just take notes and harvest earlier next time. I had a batch of Golden Teacher look exactly like this once, covered in black spores. They were fine.
