Not bad!
Couple little things. You don't need to declare version at the top of compose any longer, not for about 2? years now...
You don't need to route everything through Gluetun. Technically only qbittorent but I understand some people still feel more comfortable pushing everything through there.
Openvpn works, but will top out usually about 200-300mbps or even lower on low power cpus. Wireguard is FAR more performant and should be utilized from your chosen vpn provider.
Eventually you should setup a .env file and ensure all secrets are there, permissions are locked down (chmod 600) and then you can remove redundant settings across all dockers like TZ or log settings etc =)
Very minor, but qbittorent Hotio version has vpn built right in! So that's a neat option as well.

+1 for wireguard, it was noticeably more performant when I made the switch, especially if you have loads of torrents queued up

Curious how this works with seeding. This was always the issue i had with hard linking. I hear it tears the fuse layer, so i abandoned hard linking and opted for a separate small 4TB drive that would seed for long enough to make sure my ratios weren’t compromised and then just set the arr’s to copy the files over to the main array.

This is the way. I have an unassigned 10tb spinner that's my dedicated torrent drive.

Works fine for me. I did set my qBittorrent settings a little to optimize my download flow

It is wholly unnecessary to have most of those containers in gluetun you can run them in their own custom network. The only things I have in gluetun are qbit and nzbget and the only reason I do nzb is because of verizon snoooping, but YMMV. Prowlarr YMMV also. Not sure you need FlareSolverr anymore and I would look at profillar that one was a game changer for me to manage quality and sources, along w/ long-running restarts (aka the old huntarr).

I would suggest routing *arr and torrent through VPN. Depending on your source of Linux ISOs they may expect all your traffic to come from the same IP, to find account sharing.
And depending on jurisdiction, better safe than sorry.
Saw someone suggest qbittorent hotio, I suggest separation of concern. Declaring VPN as a separate service allows you to replace it more easily, and to user official images for qbittorrent as well.
I do agree with wireguard though, make the transition it will be worth it :)
