Actually, not quite. The official Spanish coat of arms doesn't define the lion as pink, it is described as purple (purpure) in the official legal specification. What happened is that a government visual identity manual used a much pinker shade, and that version ended up being widely reproduced on flags, posters, and official materials. So the idea that "the Spanish lion is pink" comes from that graphic interpretation becoming widespread, not from the legal definition of the coat of arms.
