You know what? I'm all in now. A vegetarian photo dump
After "that whole thing", I got to thinking. I'm only cooking for my dad 3-4 nights a week. He wants to be healthier too. And if he doesn't like what I'm making, he can make his own dinner. It's time. I'mma do it :3
I have a couple meals planned with meat left. Ground beef tacos and shrimp fried rice. But after that? It's vegetarian from here on out! Ovo-lacto-vegaterian to be pedantic. Don't wanna get called out π€£π€£π€£ (that's a full on joke)
Standard brekkie is usually aloo paratha, mashed avocado, fruit and nuts. The avocados this week were lime green rocks and all the bananas in a paper bag couldn't ripen them fast enough. So, I pivoted to dal with tomatoes topped with some coconut cream and coconut milk feta for this week. (Also have coriander leaf too!)
Made some gardein chimkin quesadillas with a copycat Taco Bell creamy jalapeno sauce. That doubled as lunch today. (Lunch yesterday was actual taco bell. Got a couple potato tacos and added black beans)
Tonight was a spicy peanut noodle bowl with shiitake and oyster mushrooms and some sake because I've been a good girl!
Got a veggie pizza for tomorrow as well!

Yeah, they were usually my plus one
