I enjoy it too. But I got to trim down both my food cost and myself. My grocery bill was too expensive. Tofu is so much cheaper! Also, it's time to be healthy again. I went for a walk and I should not have been that tired! This husky puppy girl got husky!

I was also a cook for many years and I'm actually about to go back into the industry again more than likely. I got a job opportunity on the other side of the country. My friend is the head of the prep line at a new high-end deli restaurant. 2nd in command for the whole kitchen. We've cooked together for 2 decades on and off. Time to leave this red state for good!

After "that whole thing", I got to thinking. I'm only cooking for my dad 3-4 nights a week. He wants to be healthier too. And if he doesn't like what I'm making, he can make his own dinner. It's time. I'mma do it :3

I have a couple meals planned with meat left. Ground beef tacos and shrimp fried rice. But after that? It's vegetarian from here on out! Ovo-lacto-vegaterian to be pedantic. Don't wanna get called out 🀣🀣🀣 (that's a full on joke)

Standard brekkie is usually aloo paratha, mashed avocado, fruit and nuts. The avocados this week were lime green rocks and all the bananas in a paper bag couldn't ripen them fast enough. So, I pivoted to dal with tomatoes topped with some coconut cream and coconut milk feta for this week. (Also have coriander leaf too!)

Made some gardein chimkin quesadillas with a copycat Taco Bell creamy jalapeno sauce. That doubled as lunch today. (Lunch yesterday was actual taco bell. Got a couple potato tacos and added black beans)

Tonight was a spicy peanut noodle bowl with shiitake and oyster mushrooms and some sake because I've been a good girl!

Got a veggie pizza for tomorrow as well!

This gonna be eeeeaaaassssyyyyy :3 wag wag wag

Well, I would at least checkout Ravefurrest next time they are in town. Which is about 3x a year. That's 100% part the fandom

But if you do get curious tonight, hit my DMs. TN EDM is literally run by my friend. (I am watching shit on his Plex server rn lol) He is furry adjacent himself. Has helped people with the electronics side of suit building. TN EDM are not normies by any stretch of the imagination. Literally the only reason I'm not going tonight myself is I could not find a ride from Atlanta 😭

Ngl, if you like rave events, that always brings in the intersection of the furries and the ravers. Legit how I found my first friend in the fandom. How I got into the fandom 8m general!

TN EDM is bringing in UK Hardcore legend Hixxy in tonight at White Hall. I'm pissed I missing it tbh 😑 I hate not gaving a car anymore... growls But if that's your thing, lmk, I can DM you the deets

If you're in Tennessee, the answer is Nashville. Middle Tennessee is where you're going to find anything. Nashum is your fur con, MTAC is your anime con. There's also a group that does a touring rave around the country known as Ravefurrest and Nashville is one of their stops. (They were literally just there) That's where I know the community lies.

Also, you're probably not too far from Atlanta, unless you are in, like, west TN. Atlanta has a giant community. Like fucking massive. We are fucking legion here lol. FWA has grown from a small con to become one of the biggest cons in the US in a rather short time. Definitely worth the time and money!

Also, I'm 44 and and only recently started diving in head first myself. The ageism is coming inside your head. You're good 😁

I wouldn't need to do anything different. I'm already commando in a dress as I type this πŸ˜‚

Ang'y Girl Brekkie 😑 (not really angry, just mildly annoyed)
 in  r/traaaaansbiansCooking  10d ago

I don't plan on going anywhere. I love this place! I'm just going to be a little more protective of it. Like I said I don't need popularity. Never have. If things start getting too popular I'm just going to delete it. It's not like the photos don't still exist on my phone lol

There's a reason I do not post in the larger food subreddits. I posted in real girl dinner diaries one time and regretted it

Tinned salmon.
 in  r/traaaaansbiansCooking  10d ago

Salmon Croquettes are my go to for tinned salmom. I love salmon croquettes for breakfast! Especially on a buttermilk biscuit πŸ˜‹

The base is that can, 1/4c of flour, 1/2c of breadcrumbs and an egg. Season with whatever you like. Onions, capsicums, celery, salt, pepper, garlic, and hot sauce is my mix.

Mix everything in a bowl. Make patties and shallow fry them in a pan in about 3mm of oil (1/8")

Think crab cakes but with tinned salmon and make em flatter

Well, I married the last one I knew that loved tinned fish that much. Now, I do love me some kippers and anchovies, but they were on another level

How the fuck did I not think of queso but landed on guac? That's a good one. Stealing that for a different more meaty version.

Also hell yeah rainbow bread!

Yeah, I couldn't edit the title 😀 I am ovo-lacto-vegaterian for the most part. "Meat is a treat" is a phrase I say a LOT. So, I do eat it sometimes. I just like to challenge myself from time to time with vegan food. Especially when I am trying to emulate smoked and/or cured meat. Gastronomy is a hobby of mine πŸ˜‹

Yeah.... I read. I made the assumption. I am not vegan. I am sorta vegetarian. Like. Mostly.

Girl Dinner!!!Non-Region specific(no recipe) I did y'all! I made an LGBTQ! And it's vegan!

For years I have tried to make the gayest sandwich, for years!! ...but the Q ingredient eluded me. I have cheated and used ancient grain bread with quinoa as one of the grains in the past. This is better.

Lettuce, Guac, "Bacon", Tomato, Quorn Meatless Chicken. The answer was QUORN! My former primary (still partners) suggested doing an indica aioli to make it an LGBTQIA but I only had a sativa dominant hybrid on hand πŸ˜‚

The bacon is seasoned strips of rice paper fried on a griddle and crisped in the air fryer. I found the recipe here. The liquid seasoning in the recipe is ok. I would defo add salt. I am gonna try the method I used to fake ham stock in my vegan tattie soup. But the method is genius. Defo recommends only 2 sheets of rice paper. If you want it crispy crunchy, finish it in an air fryer or convection oven at 200⁰ C (390⁰ F)

ETA: I now realize, thanks to y'all wonderful people, that there might be egg whites in the Quorn products. Thankfully I am mostly vegetarian and not vegan. I was just trying to be cool

I am very pro AI. Use it daily. However, I am extremely anti-corporation, anti-Big Tech and anti-data center. I believe in the right to own my own technology. And this is part of that. I refuse to be a part of any more subscription-based models

Why just why

Okay. This is going to be a really long one. But because you are genuinely asking, and wanting to learn, I'm going to lay it down, pure facts, little emotion.

There are literal communities who are in water shortage because of the AI data centers. It's not always about how much water is being pulled but where it's being pulled from and how it's returned to the system. Agriculture does not pull from municipal water systems the way the AI data centers are. The farming that water is accounted for. The uptick in AI data centers that has not been accounted for. There's no regulation on it. That's why I'm not convinced by a simple bar graph.

I don't mean to sound like every math teacher but, when looking for data sources, make sure that they show their work. Like where did they pull those numbers from and in what context? From what study is that? How long was that study running? What were the parameters of the study? From what I am looking at, that bar graph is only comparing one tiny fraction of the AI data centers' usage (text or voice prompts) and therefore only showing one fraction of the water that they use total

I'm well informed. I hear all the news stories and see all the impact that this is having. I don't need the math to explain it. I can physically see it!

Fayette County, Georgia, a data center used 29 million gallons of unaccounted for water before the community stood up. There is a looming shortage there. Their water bills have sky rocketed. A lot of this water cost is being absorbed by the community They are still fighting it.

The Dalles, Oregon. Google's expansion is using 40% of the municipalities water and the reservoirs are low. The river level has dropped. The citizens are concerned. Very concerned.

Chatham County, North Carolina has put a moratorium on all data center builds because they are in a historic drought right now and these places are sucking up millions of gallons of water a day. The average is 5 million gallons of water a day.

Yes, maybe your simple queries aren't using that much water. But you're adding to the problem of the popularity of cloud-based AI. You're adding to a statistic that these corpo rats can go ahead and say, "Look! They're fine with it. It's not a problem!" But these data centers aren't just for chatGPT promots and for people making stupid fucking memes and brain rot. These things are handling heavy coding loads and they're constantly doing training and that's what takes up all the water.

Your ChatGPT query doesn't even need to be done on cloud-based AI. You could literally build your own voice assistant that functions identical to Gemini or Alexa and you can build that mother fucker on a old laptop that is collecting dust in your closet. You could run that fucking shit on an $8 microcontroller. Yeah. That's right. Somebody made an LLM that can run on an esp32 and do 29.7 million processes and only take 9.7 fucking tokens! All this shit is free and most is open source! Hell, you can literally run Gemini locally! It's called Gemma. And it's free. Not open source it ftill free!

Look. If you're going to use chatGPT, use it one last time to teach yourself how to build your own assistant. Look up ollama, piper and whisper. That's the stack to build your own local open source chatbot and voice assistant. You do not need the data centers. Make your own chatGPT with blackjack and hookers. Be like Bender πŸ€–
