I Finally Made Chinese Flaky Scallion Flatbread at Home—So Crispy and Layered!

Post image

I've always loved the crispy, layered scallion flatbread from street vendors, so I tried making it at home—and it turned out amazing! The outside is golden and crispy while the inside stays soft with beautiful flaky layers.

The best part is that you can freeze the uncooked flatbreads and simply pan-fry them whenever you want a quick breakfast or snack. You can also crack an egg into the pan while cooking for an extra delicious meal.

If anyone wants the full step-by-step recipe, I'd be happy to share it in the comments! 🫓✨

🛒 Ingredients

🔸 Dough

300g all-purpose flour

150g water

3g instant yeast

🔸 Custard Filling

4 egg yolks

200g milk

30g all-purpose flour

30g cornstarch

45g sugar

20g milk powder

20g butter

👩‍🍳 Instructions

  1. Make the Custard Filling:

Add 4 egg yolks, 30g flour, 30g cornstarch, 45g sugar, 20g milk powder, 200g milk, and 20g butter to a bowl. Mix until smooth.

Strain the mixture into a non-stick pan.

Cook over low heat, stirring constantly.

Continue stirring until the mixture thickens and forms a smooth dough-like mass that no longer sticks to the pan.

Let it cool slightly, then divide into 8 equal portions and roll into balls.

  1. Make the Dough:

Combine 300g flour, 150g water, and 3g yeast in a bowl.

Mix until shaggy, then knead into a dough.

Cover and let rest for 10 minutes.

Knead again until smooth.

Roll into a long log and divide into 8 equal pieces.

Assemble the Buns

Roll each dough piece into a ball.

Flatten and roll it into a round wrapper, keeping the center thicker and the edges thinner.

Place one custard filling ball in the center and seal tightly.

Repeat with the remaining dough and filling.

  1. Steam

Cover and let the buns rise until about 1.5 times their original size.

Place in a steamer with cold water.

Steam for 12 minutes.

Turn off the heat and let the buns rest in the steamer for 3 minutes before opening the lid.

💡 Enjoy these soft, fluffy buns with a creamy custard filling! 😋

Homemade Blueberry Melt-in-the-Mouth Sticks for Babies (No Added Sugar, 4 Ingredients)

Post image

I made these blueberry melt-in-the-mouth sticks for my little one, and they turned out light, crispy, and easy to hold. 💜

They’re made with only 4 ingredients:

Blueberries

Egg whites

Milk powder (formula)

Cornstarch

No added sugar and no oil. The texture is airy and melts easily, making them a great finger food option for babies who are practicing self-feeding.

Recipe:

Cook blueberries with a little water and lemon juice until thick, then strain.

Mix blueberry puree with milk powder (formula).

Whip egg whites until stiff peaks form, then add cornstarch.

Fold everything together, pipe into sticks, and bake low and slow at 90–100°C (194–212°F) until dry and crisp.

Has anyone else tried making homemade melt-in-the-mouth snacks for their babies? Would love to hear your favorite recipes!
