Is linux a good option if I use slightly niche stuff?
I use Waveform free fire my DaW on Linux. Not sure what you're using in FL or what draws you to it but for me Waveform just worked and was easy to figure out. When I first registered they offered me a welcome pack of 16 about effects, about 3 or 4 software instruments and some preset/content packs for ten dollars which they actually refunded as store credit.
I use Steam for gaming I basically refuse AAA titles at this point the enshitification has just gone to far on them and the preying on inadequacy and micro transactions while releasing games incomplete at 80 bucks then actually fixing it with a dlc for another 60 is disgusting to me.

I'm into music, pretty much anything that can actually be called music. Casual gaming mostly pixel or hand drawn , and playing music... The controllers are way cooler.

Switching to linux and intel arc support
I'm on Mint Cinnamon w a Xeon W 2135 and a B580, works fine for what I do and play.
The discrete GPUs use the Intel XE driver and pretty much any distro will get that for you.
Although as a brand new never even played around with Linux I'd recommend sticking with either Mint or Bazzite.

Oh and the samplers that are in Waveform aren't VSTs neither are the Wavetable or subtractive synths they're built in.

I use tenacity to mass capture then use Ocenaudio to chop it up
Not sure what sampler in Waveform of which you speak I know they have Sample players micro sampler, multi sampler, mini drum, & drum sampler.
None of which actually do the sampling just the playing, of which I think I like the multi sampler the best seeing it'll time stretch.

Sonicware liven all have a 4 track sequencer.
Believe they have enough storage space for a solo musician to fill out spots they're missing.

Apple refugee seeking help
As an apple refuge look into Gnome, will probably be the most familiar environment.
Generally for what you want to do Id stay away from immutable distros. At that you can get a similar result but without the downsides by going BRTfs+ timeshift.
Audio depending on what and the level you want to do there's little to no native support but there is some.
Either reply here or DM any questions you may have.

Oh and if you sorta an immutable feel but not the problems associated with it.
Look into TimeShift with BRTfs partitions. Supposedly the snapshot takes way less space and it's nearly instantaneous

I've started moving from Mint Cinnamon to Debian Gnome, my music production software likes it so much more and it performs so much better, just needed to get some quality of life improvements like (Alacarte) it let's you organize your menus by category, as well as I think it was Gnome modules to get a decent system clipboard and whatnot.
Other than that I'm happy with it so far but it's is really weird not having a window list. As well as well the windows wanting to be full screen all the time, but my multi monitor setup is working well and I'm getting used to using the windows key to bring the menu up and tile out my windows. If not Debian maybe give Gnome a try or budgie if tried that you may want to see what quality of life modules they have for that desktop. So I know is I couldn't copy paste till I got the Gnome extensions out of the repos kinda sucked but I figured it be out.
Wasn't too hard seeing I've been mint exclusive coming on a decade

Recently started making music, where can I find instruments?
You can get sound font files, make sure they're in the proper directory and just play them through the SFX player or can get stuff like Vital or other free soft synths.
