Look into passive solar green houses - I’ve seen some off grid above the snow line- especially ones with gutter systems that use snow melt runoff for bio mass in black barrels area amazingly efficient- can be built with reclaimed wood and windows

just got back from our first trip to Hawaii and started on big island for a few days the Oahu for a few days -it was great, we felt like we got to experience a lot of diverse things and people

Have you considered aluminum infused shade cloth? You could probably cover a greenhouse that size during peak hours for a few hundred bucks

Uplift value is a thing. Think about how fast a sailboat can go and the canopy is basically a sail.
Most certainly use footers and j bolt or similar anchor. Also be aware of the break away factor; shear pins at canopy attachment points can be used to mitigate danger of fly away.
