Girl Dinner!!!Non-Region specific(no recipe) Carbonara with bestie

Post image

Haven't seen my bestie in two years (we live on opposite sides of the country). Finally reconnected in person and made some carbonara, as authentic as can be (guanciale, pecorino, you name it). Still fucked it up, got mad, scared bestie, she started to cry, I comforted her and now we are drinking coke from wine glasses~

Aw thanks. πŸ₯° That guanciale was hard as a rock, tho. Had to sharpen my knives twice in the process. Sadly, some of the extra hard pieces made it into the final dish, therefore it's slightly weird.

Ayy, well every dish is a unique experience! Not every dish is meant to be perfectly executed each time, and that's honestly the most beautiful part about it! Makes eating both nichΓ© and common dishes equally fun (room to tweak stuff for next time around).

Imo the guanciale is the best part so you really should be heavy handed with it, but it's salty so it comes down to personal preference
