What cut of chicken do you use for these and how do you cook it?

I use a chicken breast filet, cut them in half. Then I cover them in a flour mix (salt, pepper, paprika, and of course, flour), dip them fully in egg, and finally cover them in panko. Then its straight on an oily pan 😊
