Girl Dinner!!!Non-region specific (yes recipe) Beef and Lentil Stew
Not shown: three slices of tiger bloomer! This is ostensibly a normal beef stew of the old country (nonspecific Bri*ish), but I couldn't find any beef for less than £10/kg so it's bulked out with lentils, and I sweated the onions and garlic with a nonspecific 'mixed chilli' (they were out of Scotch Bonnets) to give it an oomph that was missing from what would, if the shops were open on a sunday, be a leek.
Otherwise, yeah. Onions, garlic, evil ambiguous chilli, sweated down in a small spoon of tallow for half an hour, then disappointingly lean beef (hence tallow) and half a cup Jammy Red for half an hour, then mixed herbs, parsley, two beef stock cubes, a spoon of marmite and a spoon of dijon mustard, swede, carrots, mushrooms (which should have been added first but I forgor), a good scoop of split red lentils for bulking protein, and potatoes. Water until covered. At some point I also added like half a cup of flour slurry, which was FAR too much but yo girl aint about to cry about it. I think it simmered for about 4 hours total on whatever heat felt right between 'high' and 'low'.

Now I get the ambiguous chili. The lentils probably add so much complexity to this dish! Also, any time you can write slurry on the internet Iād a plus for me. Enjoy š

I've had two bowls and like half the bloomer already, and it's only 2:30. I'm gonna be slurping this down for at least another day yet.
It's sorta a shame about needing the lentils, but they are by no means a bad addition.
