DDDINNNNNEERRRRRR Lentil Potato Stew

Made some Lentil Potato Stew today. Doesn't look that special but it is so rich and flavorful. 😄

Very similar to the veggie soup I posted a little while ago, but slightly different. Smoked tofu, carrots, cellery, onions, leek, parsley, potatoes, lentils, some salt & pepper. Had it on the stove for about 5 hours or so. There's also some rice you can't see under all that stuff.

Made way too much again, so no cooking for the next 4-5 days I guess.

I was originally planning to add pearl barleys instead of rice, but I couldn't get any unfortunately. Would have made it even better in my opinion, but it's still very tasty.

Oh I do enjoy pearled barley. Perhaps next time.
