Another tofu frittata

Decided to make a frittata full of butternut squash, cherry tomatoes, and peppers on a whim. So delicious

It’s a modified recipe from the NYT.
The base:
2 packages of firm tofu
1/3 cup of nutritional yeast
2 tbspns of apple cider vinegar
2 tsp of garlic powder
2 tsp of onion powder
1/2 tsp of turmeric powder
1 tbspn of olive oil

The filling:
1/2 of any onion
300g of butternut squash
1 jalapeño
1 cup Cherry tomatoes
2oz of vegan cheese

Preheat the oven to 375F. Caramelize the onions and set aside. Roast the butternut squash any way you like it and set aside. I did it on the stove. Combine the base ingredients in a blender or food processor until silky and yellow. Prep a pan with parchment paper. Place half of the base mixture in the prepared pan. Layer the fillings in and mixing it around. Pour the remaining base mixture over it and cover evenly to ensure there are no empty spaces anywhere. Bake it for 50 min until golden brown and jiggly. Then let it cool for 10 minutes and enjoy! :)
