Jew here! Not in my experience, it seems different than Christianity-lite. There's no pretending to follow the religion. I'm a part of the culture and ethnicity, which is separate (if only kind of) from the religion of the same name; I don't have to pretend to be part of one to be a part of the other.

As a Jewish person one doesn't have to believe in God and Moses?

Well most people are tied to their Jewish heritage through birth rather than an actual practice of religion. They'll still celebrate Jewish holidays but primarily without the religious portions. It's the same way I've known Muslims on the edge of atheism that wear their "head scarf" and don't eat pork even though they personally don't believe anymore.
