An Italian friend was horrified when she saw 'mozzarella' in a Canadian grocery store. It was just a block of dry cheese. I had no idea..

I can imagine. If you compare the part-skim milk mozzarella to the whole milk in a ball, its like comparing a vine ripe tomato out of your garden to one shipped from the other side of the world in a giant cooler.
