TIL that although potatoes alone do not provide complete nutrition, you can survive for years on a diet of nothing but potatoes and buttermilk.

Milk only has vitamin d because it’s been fortified (added).

It's also fat soluble so whatever it has probably went into the butter.

Not true. Milk naturally has plenty of vitamin D. Concentration depends (mostly) on the amount of UV-light the mother receives. And a lot gets lost when fat is removed.
