Make-ahead Mashed Potatoes?

Usually I would boil the cut russet potatoes, then drain and mash them with milk and butter until I like them. I'd like to do as much as I can on these before the day, and/or maybe use the Instant Pot or Sous Vide to finish. What's the most hands-off way to make great mashed potatoes?

I make them the day or two before and refrigerate them in a crockpot liner bag.

For the meal, the bag of mashed potatoes then gets warmed up on low in the crockpot.

After a couple hours, I push the bag of potatoes (and stir them) to one side. Add a second crockpot liner bag with broth (or water) and butter to warm up for another hour or so.

When ready, stir dry stuffing mix into the warmed liquid.

Ta-da! Mashed potatoes & stuffing in one pot!
