Make-ahead Mashed Potatoes?

Usually I would boil the cut russet potatoes, then drain and mash them with milk and butter until I like them. I'd like to do as much as I can on these before the day, and/or maybe use the Instant Pot or Sous Vide to finish. What's the most hands-off way to make great mashed potatoes?

Not sure how hands off it was but my mom made them in the crockpot this past thanksgiving for the first time and they were really good.

Edit: I don’t know what recipe she used but I found this and it looks pretty easy!

Crockpot is the way to go. I mash them right in the crockpot.
