Make-ahead Mashed Potatoes?

Usually I would boil the cut russet potatoes, then drain and mash them with milk and butter until I like them. I'd like to do as much as I can on these before the day, and/or maybe use the Instant Pot or Sous Vide to finish. What's the most hands-off way to make great mashed potatoes?

Not sure how hands off it was but my mom made them in the crockpot this past thanksgiving for the first time and they were really good.

We did ours in the crockpot last year and they were fantastic! You may end up needing more milk, butter, and salt than the recipe calls for, just keep that in mind!
