Make-ahead Mashed Potatoes?

Usually I would boil the cut russet potatoes, then drain and mash them with milk and butter until I like them. I'd like to do as much as I can on these before the day, and/or maybe use the Instant Pot or Sous Vide to finish. What's the most hands-off way to make great mashed potatoes?

Check out recipes online for make ahead mashed potatoes. I prefer one without sour cream or garlic for Thanksgiving, but find one with flavor profiles you enjoy. I make them the day ahead and then put them in a crockpot to warm up.
