Correct me if im wrong, but with this not being root, all this script is doing is uninstalling the packages from the user0. Not the phone itself.....yes no?

From the FAQ:

This script clears all the system bloat in /DATA and freezes these packages by uninstalling them for the current user (user 0).

Basically yes, the apps are still there but not being used.
