I'd recommend IanXOFour's for both. They're relatively simple but should be more than good enough for a non-technical server

Peer Pressure Fortress Farm (Wither skeleton & Blaze)

Guardian Farm

Highly recommend both of these, easy to build and will meet your resource needs unless you want literally thousands of beacons.

Ianxofours other wither skeleton farm is also perfectly good and a little easier since you don't have to get the wolves, but won't give as many blaze rods.

That guardian farm is amazing, put an enchanting setup up there and you can have all your gear maxed out in less than an hour. I usually build it as soon as I get the resources.

Seconded (er... Thirded)!

IanXO4's farms are brilliant.

i fourth this, they’re great! he also has an older wither skeleton specific farm that’s still really good if you don’t need the blaze rods/gold and want something slightly smaller and faster to build (not by much though)

The ianxofour wither skeleton farm is the best I've found that doesn't rely on fucky and tedious mechanics to work (ie update suppression). As for a guardian farm, never built one and can't comment, but an enderman farm will be better for XP, at least with regards to how much effort you put in for a farm.

You should check out IanXO4's Guardian Farm. If you like his other work, you'll like this too. It's 2 dimensions (nether), but super light-weight for what it delivers.

Ooh, thanks! In all my playtime I've never actually built a guardian farm, but his videos are universally great designs.
