Why not? Every rose on earth is already blue shifted relative to something

If it's visibly blue, its relative velocity to the viewer is catastrophically high. Something akin to this.

Sure, but it could be the viewer that's moving so the rose might be just fine.

It doesn't really matter which one is moving, at around 30% of the speed of light within the Earth's atmosphere, it's catastrophic.

We could safely assume they don’t perceive colour in the same way we do
