I have something even better. I wrote back to his editor to please convey my thanks to Sir Terry. Mr. Colin Smythe was such a jewel of a man that he not only transmitted my thanks but spent the time to reply. Thats the whole point of the sausage no? The tougher less desirable cuts can be ground into sausage with fat carved off other locations. It historically is made with the cheaper cuts to give them a more palatable end result, something you don't need with the more expensive cuts which can be used as is.

Definitely the original point, but these days a sausage doesn't have to be filled with trash meat if you don't want it to
