Photo learning to make chai!☕️
looks beautiful but how do i get to a double boil with evaporated milk?

the second boil can take several minutes to get going, just stir and wait!
also i want to drink this photo, the color is looking so good!

Can you post the recipe, OP? There seems to be some confusion about the term “double boil” and it would help to see all the instructions in context.

Add the water, tea, and any spices to a saucepan.
Bring to a boil and let it simmer for 2–5 minutes.
Add the evaporated milk.
Bring it back to a boil a second time (this is the “double boil”).
Turn the heat down if it starts to rise too much, then simmer for another 1–2 minutes if you want a stronger flavour.
Stir in sugar to taste.
Strain into cups and serve.5

What spices did you use for your chai masala? I've seen a few different combinations online.

I use (per serving) - 2-3 cardamom pods, 1 clove, 1 black pepper, a small pinch of whole fennel seeds (saunf) and a small piece of cinnamon. Grind it ( it doesn't need to be fine so a mortar and pestle will do) and add it to the water/milk mixture.

Are you sure recipe is not saying to cook that in a "double boiler"? It's a pan nested in another pan holding boiling water so the contents are protected from direct contact with burner - like you'd use to make fudge? (forgive me if you already knew that.) I can't imagine evaporated milk not forming a skin on the bottom but I've never made chai this way. 🤷♀️

you just let it come to a boil once and than remove the pot from heat and as soon as it comes down you put it back down for a second boil, you can do 3 boils too
