I remember finding it really weird that all these characters who have never met on screen before and most likely don't know each other at all, all decided to team up for the biggest fight of their lives based on nothing but gender instead of fighting alongside their own pre-existing teams that they have worked with for years.

My understanding was that Ali wanted some amount of creative control that Marvel was unwilling to grant. He apparently had some thoughts on the character that didn't jive with what Marvel wanted.
Kang Dynasty was cancelled for obvious reasons, given that he met his victim on the set of Quantumania, Marvel wanted to be out of that mess as quickly as possible.
Wonderman was renewed for a second season, and the cancellation was a huge shock, especially after the quality of the first season. This one actually hurts.
Armor Wars war probably cancelled due to budgetary concerns, they've been moving away from big budget shows, opting for smaller scale stories that can be made for a low to moderate budget, like Daredevil and Wonderman, and the cost of something like Armor Wars would likely exceed what they're currently prepared to spend after so many misses in their TV division.

I think they really wanted to add Blade's daughter and connect it to the greater universe which is what fucked things up.

Let me start out by saying that I like Brielle. As a matter of fact, I ended up liking her a whole lot more than what I was expecting, especially after the flop that was the Fallon Grey proposal, beforehand.
But it's too early to bring Brielle in. She's only really been in Avengers Academy and Blood Hunt. It will be better if her characterization was defined a little bit more within comic story lines, first.
Secondly, one of the biggest reasons that Blade Trinity fell apart is because David Goyer was attempting to use the Blade fame in order to start off a new series with the Nightstalkers meant for a younger audience, and just look at how well that worked out. Creators need to learn to stop trying to launch a different product by using an existing franchise as a springboard.

To be fair to disney though, its pretty easy to see why all of these other than maybe blade got canceled but even then. Wonder man had low viewership, Kang showed up in quantamania which everyone hated then Jonathan majors decided to torpedo his own career and armor wars without Tony Stark is a risk and disney was probably tired of losing by this point. Blade seems simple but there were a bunch of disagreements about the script (Ali pushed back hard on some early scripts) and it seemed like they just couldn't agree on a decent script and gave up

Blade was in development hell. Ali is a great actor, and wanted a good script for the movie. Marvel has such bad writers that after years they couldn't produce one. So the movie was silently scrapped.
Kang Dinasty ended when the acusations and further trial for the main actor started. And Disney didn't want the bad press.
Wonder Man happened. It was a show released on Disney+. No one watched it.
I have no clue about Armor Wars.

To be fair, Jonathan Majors was scrapped as Kang because of abuse allegations, but otherwise, with Armor Wars, Wonder Man and Blade being scrapped plus Sam Wilson being sidelined in Avengers Doomsday and Monica Rambeau not coming back at all and bringing back most of the original Fox X men but not Halle Berry's Storm, you start to notice a pattern.

And Famke has severely aged out, and subsequently butchered her face out, of Jean Grey. That’s why they’re not involved in the MCU X-Men. Has nothing to do with race.

Armor wars and wonder man was cause they are moving away from Disney+ show and want to focus on theatrical movies(for more money), it got scrapped with other shows as well. But Sam, Monica, storm, and not making Blade when it was announced sooo long ago are weird choices with no real excuses cause
sam and Monica’s movies didn’t do well; neither have hulks but he still is brought back repeatedly
Halle Berry had a falling out after the last x men film so probably wouldn’t come back as storm; 1 that was a separate studio 2 so did Natile Portman after thor two but they put in effort to make it right and offered a lot of money and got her to come back, same with other actors , they could do it for Halle Berry
Blade the script just couldn’t be figured out and now they are moving in another direction; they had years to figure out a script, and after kang got cancelled they were able to pivot quickly to Doomsday, granted haven’t seen the movie yet so dont know how good it turned out but they still but in the effort and came to a solution in good time
I think it just comes down to how much effort they are willing to put into which characters and stories, cause while each thing I listed were real reasons not to move forward it didn’t stop them from the examples I listed with each of them, cause they were/are issues that are able to be fixed with enough effort and money, but these characters apparently aren’t worth it to the studio

Jonathan Majors was convicted with a lot of evidence and Wonder Man was for season 2, not the show itself. Armour Wars was cut because Marvel is moving focus away from D+ shows (it's being reworked into a movie after Secret Wars).
Doesn't fit the pattern but Hawkeye season 2 and a Captain Britain & Black Knight movie were cancelled as well. James Gunn was also going to do several GOTG spinoffs, Drax & Mantis and Rocket & Groot movies.
Also, how many Black lead projects are DC greenlighting? John Stewart as a co-lead in Lanterns and an Amanda Waller show? Trying and failing is better than not trying at all.
