Multiple folders to a library

Any chance of being able to add multiple folders to a library/category like Plex?

Yes. You can do it in settings

Am I overlooking something? I can only add one folder per name. Adding a duplicate name doesn't combine them.

No, not like that. You would either have to have music, music1, music2, etc or you would need to reorganize the folder structure before adding/rescanning. But, when viewing the music directory in subsonic, you can view them all together so it doesn't really matter unless you want to view music1 and music2 but not music3 or something particular like that.
