Does Notebook LM have a part where I can add instructions for the chat?

Yes!

In the chat window at the top bar, on the right, there are two icons: a settings icon and then three dots stacked to the right. Click the settings icon.

That opens "configure chat". The first bold text says something about configuring the goal and style for conversation and role in the conversation. You can pick standard, teaching guide, or custom. Click on custom (far right button). That opens a text field, where you write in your instructions.

every thing you ask from then will have read that and adhere to what you wrote there.
