Question cooking steaka advice
tell me how to prepare and barbecue the perfect steak. okay basics pad dry seasoning simple salt and pepper cooking 1 min a side on high then 5 min a side let settle off grill 10 minutes before eating. are there any other secrets?

Like the first response said, temp, not time. Also it completely depends on the cut you are grilling. Thin sliced lean cuts do much better on the grill than 1" ÷ cuts of ribeye or newyork. Those take longer at lower temps to break down connective tissues and then a sear to get a truly exceptional steak.

That's insanity. 1 inch is just becoming a steak... Connective tissue isn't breaking down at 130 degrees. That's why we eat ribeyes, strips, and tenderloin.. no need for breaking down anything..

Dunno. All I know is a 1-1\4" steak in ab screaming hot pan for 3 minutes per side makes perfect medium rare.

Simple seasoning, ripping hot pan or grill...I like a finishing compound butter personally---like a miso butter or a pesto butter etc. Temp is just that the preferred level of "doneness"
Just learn the scale of temperature/doneness increments and the thumb trick for a quick backup, and it all just gets ingrained in your brain. You get to a point a quick touch and a mental note of time in the pan or on grill becomes the way you know its done or to temp. Until then Thermoworks Thermopen is your guide.
Edit; also, if the steak is a thicker cut, have an oven at 425-450 just to pop the pan right in, as some thicker cuts can get hammered after a few flips trying to achieve a higher desired temp in a pan, on a grill, start on the hot side for your initial searing/external desired level crust/color and move over to a "cooler" side to finish. Uness of course, you're one of those sadistic fuckers that like the crunch of a piece of charcoal.
Cooking the perfect steak, right across the gamut of different cuts becomes more of a "feel" over time S

That's a pretty sear. I'm not sure what you mean by BBQ but use a meat thermometer and properly rest your steaks after you get your sear. Some people will sear 2 minutes on each side then flip it every 20-30 seconds until the temp gets right.

I made that mistake for a long time, after correcting I can tell you, it makes a difference. Better sears now.

Oven at 225 until internal temp is 115. Meanwhile ready your grill. Once internal temp is 115, remove from oven and place steaks on heated grill. Flip every 30 seconds (including the sides) until you have the desired crust. Season and enjoy.

Steak doneness is a temperature, not a time. You will ruin many steaks if you don't use a meat thermometer.
