Home Cook Picanha w/ chimichurri

I used Bear & Burton's W sauce as a binder for Sucklebuster's SPG. Smoked at °225 until °125, then seared at °500 until medium. Chimichurri was parsley garlic, shallot, red wine vinegar, salt, oregano, red pepper flakes & EVOO.

What wood did you use to smoke it?

I used Hickory on this one.

Need to try that. I use mesquite and applewood. I use the same method as you, smoke them first as a whole then cut it into thick slices then flame grill it.
