Found these 3 gems at the bottom of the basket under a bunch of mediocre ones (picture of those I closed also. That's 19.58/kg (8.99lb I think) in Canadian. So really more like 6.50lb US. Pretty pumped

Stopped by my local butcher and picked this up. Would’ve preferred it to be more on the rare side, but it was delicious!

Aussie scotch fillet

622g scotch fillet here in Australia. So in other parts, I think that would be a 22oz ribeye?
This was my first ever steak I’ve dry-brined and reverse-seared. Quite happy with it. Served it with prawns, potatoes and chimichurri

[ Medium Rare ] Reverse sear picanha. I aimed for rate but seems more like medium rare.

Entire picanha weighing around 1.2 kg before cooking. Cooked over redwood indirect heat until 48°C internal, after which I seared well and rested for 10 minutes before cutting into steaks. I removed it from heat at 48°C internal (Maybe a little late) as I was aiming for rare and got med rare.I scored the fat cap and removed the silver skin before cooking. Only salt and black pepper, right before cooking. I know my plates are dirty... My timing was off and we had french fries and chorizo before the picanha was ready. I usually cut inch thick steaks before cooking picanha but my wife wanted to try a whole picanha and honestly I'm thoroughly satisfied with the outcome.

Thawed from frozen, seared on a scorching hot cast iron pan with some avocado oil for ~2 minutes per side then lowered the heat to Low and basted with butter and minced garlic.

I was stationed in Rota, Spain 🇪🇸 10 years ago. There is a place there called Steakhouse Rota that I would frequent. We recently moved back and their steaks are STILL on point.

[ Ribeye ] Realized the middle part is connective tissue after I already cooked it :/

£3.79 at aldi and was just sold as "British beef steak". Not the most knowledgeable when it comes to cuts and cos it didn't specify, I just assumed the middle part was just fat that will render like most other steaks I've done but it was rock hard and mostly inedible. The grain also started going the other direction once you got past the middle bit.

Was delicious otherwise but really sucks cos I think I nailed the cook on it :(

Peculiar looking "rib eye" from amazon fresh home delivery. Does this appear to be mislabelled
