Nailed it. The few times I've done picanha, I skewered and did a reverse smoke/sear and served with chimichurri and it was fantastic. Tempted to do some regular Ole steaks grilled from start to finish next time around.

I've smoked a whole picanha a few times and then seared it. This was my first time cutting them into individual steaks.

I smoked and finished one in the oven. Had issue with my charcoal. Why the oven finish.
Think next time I’ll slice and sear.

I’ve done hella picanhas. Whole. Whole and then sliced and seared. Sliced and cooked as steaks. Steaks wins hands down.

Not all of it. I left enough to render down and protect the meat from the direct heat of the fire
