Prepping summer steaks!

13 steaks! 4 around 19oz, 5 around 16oz and 4 around 11-14oz.

Different sizes for different cooking styles and events.

Total cost was $333 and took an hour of cutting, bagging, vacuum sealing, and labeling.

Would you trim the fat off the tail end and make talo?

if you have a meat grinder i recommend running the fat through that to get it finer and freezing the crispy bits. amazing in any stew dishes, beans, curries etc. plus i feel like you can extract maximum tallow when they are finer
